“When fulfilling the refrigeration requirements of a commercial kitchens or front of house display units we always inspect the premises first to attain if there is suitable space and if it’s possible to install an external plant,” explains Synecore’s Managing Director, Paul Thomas. “We have a very skilled team of engineers and designers, who solve very complex technical issues every day, so there a few limitations when it comes to building cold rooms and central production facilities.
“With any commercial refrigeration it is crucial it’s well maintained and meets strict Fgas regulations. For our maintenance (PPM) clients, we attend each site to educate the staff on how to avoid needless call outs, such as over stocking, leaving the cold room door open and avoiding incidents where the power supply to a refrigeration cabinet is turned off.”
One of Synecore’s most challenging projects was for a meat curing room at SMOAK Restaurant in Manchester, owned by Malmaison Hotels. The curing room was to become a centre piece to the front of house restaurant. It needed to be lit perfectly in order to display the hung meats in an artistic manor, while providing the ideal ambient temperature for curing meat.
“Every walk-in cold room we design is bespoke and this project was testament to our ability to follow a very strict design brief,” explains Thomas. “The angles were very tight, however this suited our insulated panel system, which meant we could cut them very accurately and use every inch of space. For display purposes we used heated glass panels that meant there would be no condensation that could potentially reduce the visual effect.”
Synecore worked closely with the interior designers to ensure the design brief was met and the end result was a beautifully crafted glass and zinc-plated cold room. The jaw-dropping focal point has since proven a resounding success among the restaurant staff and its customers.
